Healthy Tomato Corn Chowder
Ingredients You’ll Need
1 Whole Onion
3 Cups of Diced and Boiled Potatoes
2 Cups of Chicken Broth
1 Can of Diced Tomatoes
1 Can of Corn
1 1/2 Cups of any Dairy-free Milk
Ground Pepper to taste
Salt to taste
A Dash of Parsley or Fresh Chopped Parsley
Add a little avocado oil or olive oil to the bottom of a large pot. Add the onions and allow them to cook down, consistently stirring them.
Add the cooked potatoes and broth and bring to a boil and allow to simmer for around 20 minutes.
Then puree about half of the soup in a blender and add it back into the large pot. Add the tomatoes and corn and milk and allow to sit for a few more minutes while stirring before serving.
Add a little salt, pepper and parsley and you’re done! Enjoy!
